Ingredients 

Noodles

  • 1 bundle udon noodles, see note 1
  • 10 cloves garlic, finely minced
  • 2 tablespoons unsalted butter
  • ¼ teaspoon chili flakes
  • 3 tablespoons soy sauce
  • 2 tablespoons chili oil
  • 2 tablepsoons Parmesan cheese
  • 2 tablespoons sugar
  • ¼ cup reserved noodle water

Optional Garnishes

  • Extra chili flakes
  • Scallions
  • Sesame seeds

Instructions 

  • Boil the noodles one minute before al dente per package instructions and reserve ¼ cup of noodle water before draining.
  • Melt butter in a pan over medium heat, then add the minced garlic and cook for one minute.
  • Stir in chili flakes, soy sauce, and chili oil and cook for another minute.
  • Add the cooked noodles and reserved noodle water, stirring until the sauce thickens.
  • Finish with Parmesan cheese, toss well, and serve.
  • Garnish with sesame seeds, scallions, and extra chili flakes, if desired.

Notes

(1) Any noodle works. I have used spaghetti or even rigatoni and the recipe has turned out great
