Why You Won’t Stop Eating These Garlic Steak Bites

These Garlic Steak Bites are tiny cubes of flavor. You’ll get a great sear on the outside, a juicy center, and a warm garlic butter that coats every piece in delicious flavor. I love to make these when I want something that feels special without the mess of searing a steak. I won’t lie, sometimes I’m so lazy I don’t even want to use a steak knife, and that’s why I love these Garlic Steak Bites. You get all the best parts of a steak, and there’s no mess!

What Makes Garlic Steak Bites So Easy

I think the best part of these Garlic Steak Bites is you don’t need a cast iron or meat thermometer here. The air fryer makes these steak bites cook quickly while giving that even sear. While they cook, you can make a quick garlic butter, which you can coat your steak bites in after they get out of the air fryer. This is what takes care of the lack of basting you have when making these in the air fryer. I personally think this is better than searing in a pan, and I’m hoping you might think so too!

How to Make Garlic Steak Bites

In a bowl, toss steak cubes with sesame oil, salt, pepper, and garlic powder. Let it marinate for 15 minutes.

Freshly ground black pepper is sprinkled over cubed steak in a metal bowl for marination.

Lightly oil your air fryer basket and lay steak pieces in a single layer. Cook at 375°F (190°C) for 12 minutes.

Raw steak cubes are being arranged in an air fryer basket, spaced evenly before cooking.

While steak cooks, melt butter in a small pan. Add garlic and a pinch of salt. Sauté for 30 seconds, then stir in parsley and turn off the heat.

Chopped parsley is being added to a bubbling garlic butter sauce in a stainless steel saucepan.

Transfer the cooked steak to a bowl and pour the garlic butter over. Toss to coat every bite.

Hot garlic butter is being poured over crispy steak bites in a metal mixing bowl for a final toss.

Serve hot with your choice of sides. I like to serve over rice, serve with cucumbers, and garnish with parmesan and parsley!

Tips & Variations

For the juiciest steak bites, use more marbled cuts like ribeye or sirloin.

In order to get the crispiest exterior, space out your steak bites evenly, which will allow them to caramelize and not steam.

If you want extra depth in your steak bites, adding soy sauce in the marinade will help emphasize the steak’s flavors.

Frequently Asked Questions

Can I make this without an air fryer?

Totally. Use a hot skillet with a bit of oil and sear the steak for 2–3 minutes per side until browned. Then pour in the garlic butter at the end and toss until well combined.

What’s the best cut of steak to use?

I personally love to use a NY strip or top sirloin, but ribeye is the most marbled and will give you the most richness.

Can I make these ahead?

You can marinate the steak up to 24 hours in advance, but I highly recommend cooking and tossing in the garlic butter right before serving for the best texture and flavor.

How do I store and reheat?

Keep leftovers in an airtight container for up to 3 days. Reheat in a pan with a splash of water or butter so they stay juicy and don’t dry out.
