  • 3 slices bacon cut into thin strips
  • 1 tbsp water
  • 2 cups day-old rice
  • 4 cloves garlic finely minced
  • 3 scallions thinly sliced, whites and greens separated

Instructions

  • Thinly slice the scallions, separating the whites and greens. Finely mince the garlic and slice the bacon into thin strips.
  • In a small bowl, combine soy sauce, honey, Shaoxing wine, oyster sauce, and white pepper. Mix thoroughly and set aside.
  • Place the bacon in a cold pan with the water and cook over medium heat until the bacon is crispy and the fat has rendered. Remove the bacon and set aside, leaving the fat in the pan.
  • In the bacon fat, add the garlic and scallion whites and cook until fragrant.
  • Add in the day-old rice, followed by the crispy bacon and sauce. Toss everything together until the sauce is fully absorbed and evenly coats the rice.
  • Finish with the scallion greens and toss once more until just wilted.
  • Serve the fried rice in a bowl and optionally garnish with extra scallions.
