Ingredients

Beef

  • 16 oz sirloin steak, cut into bite-sized cubes
  • 1 tbsp Shaoxing wine
  • ½ tsp salt
  • 1 tbsp cornstarch

Rest of Fried Rice

  • 3 cups day-old rice
  • 4 cloves garlic finely minced

Fried Rice Sauce

Optional Garnishes

  • Crispy onions
  • Scallions

Instructions

  • Place the cubed sirloin in a bowl and marinate with Shaoxing wine, salt, and cornstarch for 15 minutes.
  • While the beef marinates, finely mince the garlic.
  • In a small bowl, combine dark soy sauce, light soy sauce, oyster sauce, sugar, and Shaoxing wine. Mix thoroughly and set aside.
  • Heat a pan over medium-high heat with a bit of oil. Add the beef and sear until browned on all sides, then remove from the pan and set aside.
  • In the same pan, add the minced garlic and cook until fragrant, about 30 seconds.
  • Add in the day-old rice, followed by the cooked beef and sauce. Toss everything together until the sauce is fully absorbed and evenly coats the rice.
  • Transfer to a bowl and optionally garnish with crispy onions and scallions.
