Servings: 2
- 12 oz steak cubed
- 2 cups day-old cooked rice
- Neutral oil for cooking
- 3 tbsp unsalted butter
- 4 cloves garlic minced
Combine the cubed steak with the Shaoxing wine, salt, and cornstarch and let it marinate for 15 minutes.
Heat a pan over medium-high heat with a bit of oil. Add the steak and brown on both sides, then remove from the heat and set aside.
Melt the butter in the same pan, then add the minced garlic and cook until fragrant.
Add the day-old rice and the steak, then season with the light soy sauce, oyster sauce, and sugar. Toss until the sauce soaks into the rice grains and everything is evenly coated.
Transfer to a bowl and optionally garnish with scallions. But it's your food, you eat it how you like.
- Don’t skip the 15-minute marinade — the cornstarch is what gives you that silky, restaurant-style texture.
- Get the pan screaming hot before the steak goes in, and cook in batches if it’s small.
- Break up rice clumps with your hands before they hit the pan.
- Add the butter and garlic toward the end so the garlic stays fragrant instead of turning bitter.
- Drizzle the sauce around the edges of the pan rather than on top of the rice, so it caramelizes slightly first.
- Prep time does not include marinating.
