Ingredients

  • 4 egg yolks
  • 4 egg whites
  • 2 scallions whites and greens separated and thinly sliced
  • 3 cloves garlic minced
  • 1 Chinese sausage diced
  • 2 cups day-old rice
  • ½ tsp salt
  • ¼ tsp white pepper
  • 1 tsp sesame oil
  • Optional: extra scallions

Instructions

  • Combine rice with egg yolks, salt, white pepper, and sesame oil until all grains are coated.
  • Heat oil in a pan and sauté garlic and scallion whites for 2 minutes.
  • Add sausage and cook another 2 minutes. Push everything to the side.
  • Pour in egg whites and scramble, then mix everything together.
  • Add rice mixture and stir-fry for 2 minutes over high heat.
  • Finish with scallion greens and serve hot.
