  • 16 oz chicken thighs cubed
  • Neutral oil for cooking

For the Marinade & Sauce

Optional Garnish:

  • Sesame seeds
  • Scallions
  • Steamed rice

Instructions

  • Place the cubed chicken thighs in a bowl and combine with the light soy sauce, honey, rice vinegar, Shaoxing wine, sesame oil, and garlic. Mix well and marinate for at least 15 minutes, or ideally 1 hour.
  • Heat a pan over medium heat with a bit of oil. Add the chicken along with all of the marinade.
  • Cook, stirring occasionally, until the chicken is fully cooked and the sauce has reduced into a glossy glaze that clings to the chicken.
  • Serve over a fresh bowl of rice. Optionally garnish with sesame seeds and scallions.

Notes

  • Don't skip the marinating time. Even 15-20 minutes makes a difference, but a few hours (or overnight) gives an even deeper flavor.
  • Cook in batches if needed. Overcrowding the pan drops the temperature and leads to soggy chicken instead of a nice sear.
  • Reduce the sauce separately for extra glossiness. Let it simmer and thicken on its own for a minute before tossing the chicken back in.
  • Toast your sesame seeds. A quick toast in a dry pan brings out a deeper, nuttier flavor.
