  • 16 oz. chicken thighs

For the Marinade & Sauce

Optional Garnish

  • Sesame seeds
  • Scallions
  • Fried egg
  • Steamed rice

Instructions

  • Place the chicken thighs in a bowl and combine with dark soy sauce, light soy sauce, ketchup, garlic, ginger, brown sugar, pineapple juice, sesame oil, and rice vinegar. Mix well and marinate for at least 15 minutes, or ideally 1 hour.
  • Heat a pan over medium heat with a bit of oil. Remove the chicken from the marinade, reserving the marinade, and cook the chicken for about 4 minutes per side.
  • Pour the reserved marinade into the pan and continue cooking until the chicken is fully cooked and the sauce has reduced into a glossy glaze that clings to the chicken.
  • Serve over a fresh bowl of rice.
  • Optionally garnish with sesame seeds, scallions, and a fried egg.
