  • ½ can Spam cut into small cubes
  • 2 eggs beaten
  • 1 tbsp dashi stock or water + a pinch of dashi powder
  • 1 tsp soy sauce
  • 1 tsp brown sugar
  • ½ tsp sesame oil
  • cups cooked white rice

Optional Garnishes

  • seaweed strips
  • sesame seeds
  • scallions
  • furikake

Instructions

  • Crack the eggs into a bowl, add dashi stock, and beat until smooth.
  • Heat a pan over medium heat with oil and hard scramble the eggs for about 1 minute, then remove and set aside.
  • In the same pan, add the cubed Spam and brown for 2 minutes.
  • Add soy sauce, brown sugar, and sesame oil. Stir and cook until the Spam is caramelized and glossy.
  • Assemble your bowl with a base of rice, then layer on the scrambled eggs and Spam.
  • Garnish with optional seaweed strips, sesame seeds, scallions, or furikake.
