  • 8 oz. noodles of your choice

For the Sauce:

  • 3 tbsp peanut butter
  • 2 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp chili crunch
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1/4 cup reserved noodle water
  • 2 cloves garlic minced
  • 1 tsp grated ginger

Instructions

  • Bring a pot of water to a boil and cook the noodles until one minute short of al dente. Reserve about 1/4 cup of the noodle water, then rinse the noodles under cold water and drain.
  • In a bowl, combine the peanut butter, light soy sauce, sesame oil, chili crunch, sugar, rice vinegar, reserved noodle water, garlic, and ginger. Whisk until smooth and fully incorporated, adding a splash more noodle water if the sauce is too thick.
  • Add the noodles to the bowl and toss until the sauce clings to every strand.
  • Transfer to a bowl and optionally garnish with chili oil and scallions.

Notes

  • Cook the noodles just shy of al dente. They keep softening as they soak up the sauce.
  • Whisk the sauce together separately before adding the noodles so it stays smooth instead of clumping.
  • Adjust the sauce with reserved noodle water a splash at a time until it is silky and coats every strand.
  • Serve right away for the best texture. Leftovers thicken as they sit, so loosen with a splash of water when reheating.
