Spicy Salmon Bowl Recipe

- 2 salmon fillets about 6 oz. each
- Neutral oil for cooking

In a bowl, combine the chili crunch, light soy sauce, rice vinegar, honey, sesame oil, and garlic. Mix thoroughly and set aside.
Heat a pan over medium heat with a bit of oil. Sear the salmon for about 5 minutes per side, until the outside is crisp and the fish is nearly cooked through.
Pour in the sauce and continue cooking, spooning it over the fillets, until the sauce slightly thickens and coats the salmon.
Place the salmon in a bowl and optionally garnish with sesame seeds and scallions, and serve with coleslaw mix.
- Pat the salmon dry before searing. Excess moisture steams the fish instead of letting it sear.
- Don't move the fish too soon. Let it sear undisturbed so it develops a crust and releases naturally from the pan.
- Watch the sauce closely once it's in the pan. The honey can go from sticky to burnt in seconds, so keep the heat at medium and spoon it over frequently.
- Use a nonstick or well-seasoned pan, since the honey in the glaze can cause sticking.
