Ingredients

  • 16 oz boneless chicken thighs cut into pieces
  • Neutral oil for deep frying

For the Batter

  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ¾ cup water

For the Sauce

Optional Garnish

  • Sesame seeds
  • Scallions
  • Steamed rice

Instructions

  • Combine the flour, cornstarch, salt, black pepper, garlic powder, and water in a bowl, and mix until it forms a batter. Add the chicken pieces and turn until every piece is coated.
  • Heat a pot of oil to 375°F. Drop the chicken in and fry until the outside is golden brown, then remove and set aside to drain.
  • For the sauce, combine the honey, light soy sauce, rice vinegar, and water in a pan and bring to a simmer. Add the fried chicken and toss until well coated.
  • Serve over a fresh bowl of rice. Optionally garnish with sesame seeds and scallions. But it's your food, you eat it how you like.

Notes

  • Use ice-cold water in the batter — it keeps the coating light and crispy instead of dense.
  • Fry in batches so the oil temperature doesn’t drop and leave you with soggy chicken.
  • Double-fry for an ultra-crunchy exterior: once lower to cook through, again higher to crisp.
  • Toss gently in the sauce rather than pouring it over a pile, so every piece coats without going soggy.
  • Store the chicken and sauce separately if you’re planning on leftovers.
