Notes
- Remove the noodles about 1 minute before al dente so they finish cooking in the sauce and soak up all the flavor.
- Dark soy sauce is optional, but it adds a deeper color and a little extra umami. Feel free to skip it if you don’t have any.
- Out of hoisin? Swap in oyster sauce and add a pinch more sugar, since it’s less sweet.
- Stir in a spoonful of chili crisp or sriracha at the end if you want some heat.

Introduction
I personally really like my Garlic Noodles Recipe; however, if you like a slightly sweeter flavor profile, this Hoisin Garlic Noodles Recipe is the one I always recommend starting with. Half of my noodle dish ideas come from the nights where I opened the fridge, didn’t have a lot of ingredients, and remembered there was a pack of instant ramen in the pantry and some hoisin sauce sitting in the refrigerator door. From there, I just cooked what came to mind, and this recipe was born and has been a staple almost every week!
Why You’ll Love This Hoisin Garlic Noodles Recipe
This Hoisin Garlic Noodles Recipe is one of my favorites because although we use instant ramen, it’s treated just like any pasta dish. Removing the noodles about a minute before al dente might seem a little strange at first, but that last minute makes a big difference. The reason we do this is because the noodles will finish cooking in the sauce, soak it all up, and in turn release their starches into the water, which helps with the sauce’s texture. It’s a very simple recipe and it comes together quickly, but those extra couple of minutes at the end are what make this Hoisin Garlic Noodles Recipe turn out so well.

Why the Sauce Matters In This Hoisin Garlic Noodles Recipe
Although the sauce, as usual, is pretty simple, it’s what makes this Hoisin Garlic Noodles Recipe stand out, and each ingredient plays a proper role. The hoisin adds that sweetness, umami flavor, and the classic thick consistency that helps the sauce cling to the noodles. The light soy sauce gives the sauce its signature saltiness, while the dark soy sauce gives the noodles that caramel dark color and umami flavor. You don’t actually have to use dark soy sauce, but I find it better for aesthetics and flavor. Additionally, although the sugar might seem unnecessary since hoisin is already sweet, a small amount really helps balance out the soy sauce and also helps the sauce reduce slightly as it cooks.
What You’ll Need To Make This Hoisin Garlic Noodles Recipe
- Noodles – Instant ramen is my favorite because it cooks quickly and has a great texture, but any noodle works!
- Garlic – 3 cloves is just a suggestion, feel free to use as much as you want.
- The sauce – Hoisin sauce, light soy sauce, dark soy sauce, and sugar create a thick, glossy sauce.
- Optional toppings – Sesame seeds and sliced scallions add freshness and a little color.
How to Make This Hoisin Garlic Noodles Recipe
Bring a large pot of water to a boil and cook the noodles until 1 minute before al dente.

While the noodles cook, heat a large pan over medium heat with a small drizzle of neutral oil. Add the minced garlic and cook for about 30 to 60 seconds, stirring frequently, until fragrant.

Add the hoisin sauce, light soy sauce, dark soy sauce, and sugar to the pan. Stir everything together and let the sauce simmer for about 1 minute, just until it begins to thicken slightly.

Transfer the cooked noodles directly into the pan.

Toss until every strand is evenly coated, and continue stirring for another minute as the noodles finish cooking and absorb the sauce.

Serve immediately and garnish with sesame seeds and sliced scallions if you’d like.

What to Serve With This Hoisin Garlic Noodles Recipe
This Hoisin Garlic Noodles Recipe is already great as a quick meal, but it also works really well as an easy side dish. Here are a few pairings I like:
- Garlic Butter Chicken. The sweet and savory bites of chicken go really well with the hoisin sauce and add some protein.
- Garlic Bok Choy. Quickly sauteed bok choy adds some freshness.
- Jammy soft-boiled egg. A halved soft-boiled egg adds extra richness, and the yolk mixes into the sauce really nicely.
How to Store Hoisin Garlic Noodles for Meal Prep
This Hoisin Garlic Noodles Recipe can be stored too, which makes it great for meal prep. Store any leftover noodles in an airtight container in the refrigerator for up to 3 days.
As the noodles cool, they’ll naturally firm up and stick together a bit as the starch sets. That’s totally normal and easy to fix when reheating.
Reheating Instructions
- Stovetop (best method). Add the noodles to a skillet over medium heat with 1 to 2 tablespoons of water. Toss for 2 to 3 minutes until the noodles loosen and the sauce becomes smooth again.
- Microwave. Place the noodles in a microwave-safe bowl with a splash of water. Cover loosely or with a damp paper towel and microwave for about 90 seconds, stirring halfway through.
Substitutions for Hoisin Garlic Noodles Recipe
This Hoisin Garlic Noodles Recipe is really forgiving in terms of substitutions, which is one of the reasons I like it so much:
- Oyster sauce. If you’re out of hoisin sauce, oyster sauce is a great substitute. It’s less sweet, so adding a little extra sugar is recommended.
- Spaghetti or linguine. Regular pasta works surprisingly well if you don’t have any other kind of noodles. Cook it just as you would the ramen by stopping about a minute before al dente.
- Chili crisp or sriracha. Stir in a spoonful at the end if you want a little spice.
