Servings: 1 loaf
- 3 very ripe bananas mashed (about 300 g without peel)
- 8 tbsp unsalted butter melted and slightly cooled
- 150 g brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 190 g all-purpose flour
- 130 g chocolate chips I used dark chocolate chips
Preheat oven to 350°F (175°C) and grease or line a standard loaf pan.
In a large bowl, mash the bananas until mostly smooth.
Whisk in the melted butter and brown sugar until fully combined.
Add the egg, vanilla extract, baking soda, and salt and mix until smooth.
Fold in the flour just until no dry streaks remain, being careful not to overmix.
Gently fold in the chocolate chips.
Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top if desired.
Bake for 55 minutes, or until a toothpick inserted comes out mostly clean.
Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
