What Makes These Sticky Sweet Pork Belly Bites
I love eating pork belly because they always feel like a treat to eat, especially when the pork is bite-sized, sticky, and sweet. These Sticky Sweet Pork Belly Bites get perfectly crisped up in the air fryer and is coated in an amazing glaze that also caramelizes and clings to every bit of pork belly. They’re super rich without being too overwhelming (which is a good thing because that means you can just eat more), and it’s the kind of dish that will 100% vanish fast if you set it out at your dinner party…or just for yourself!

Why The Glaze Is So Important
These pork belly bites are sticky and sweet for a reason! The magical sauce is made from a mix of dark soy sauce, light soy sauce, oyster sauce, brown sugar, and honey. It’s salty, sweet, and packed with a ton of flavor. What makes this even better is it thickens into a nice glaze as it cooks and combines with the pork belly and the rendered fat. Every bite tastes amazing, and when you place it over rice, I promise you will need a couple of servings because it’s that good.

Tips & Variations
If you want even crispier edges, add an extra 2–3 minutes in the air fryer at the end.
I know some of you may not have an air fryer, and if you don’t, roast in the oven at 400°F (205°C) for 20–25 minutes, flipping once.
Sometimes when I want to make the pork belly spicier, I like to add a splash of sriracha or a pinch of chili flakes to the marinade.
The glaze tastes amazing over rice, and if you want more, double the sauce and reduce it on the stove for a drippy pour-over.
Frequently Asked Questions
Do I have to marinate the pork belly?
A quick 15-minute marinade is enough to impart the ingredients’ flavors, but longer (up to overnight) will deepen the taste. If you’re short on time, you can skip the wait, it’ll still be delicious!
Can I use pre-cooked pork belly?
Yes, but reduce the air fryer time to avoid overcooking. Focus on reheating and caramelizing the glaze, which usually requires a higher temperature
What’s the difference between dark and light soy sauce?
Dark soy is thicker and slightly sweet and is mainly used for color and depth. Light soy is saltier and more aromatic. Both are key to balanced flavor here.
Can I make this ahead of time?
These are best fresh, but you can prep the pork and marinade in advance. Reheat in the air fryer to bring the pork belly back before serving.
